Pachakari ularthu (Vegetable stir fried in onion garlic seasoning)


Ingredients


Vegetable 1 cup(Cubed or julienne )
(If hard vegetable like potatoes ,beets, yam etc parboil )
Shallots 5
Garlic 5
(Crushed the above)
Curry leaves 1 sprig
Chili flakes ¼ tsp
Turmeric powder ¼ tsp


Method


Heat a heavy pan add one table spoon oil , add crushed ingredients when ½ done add turmeric , curry leaves and chili. Cook till caramel color toss in the vegetable stir fry till done.

I like to parboil my vegetable in a clay pot adding a few curry leaves for extra flavor.
