

Ethakka Appam (Banana Fritters)
Serves eight.
4 ripe bananas, cut lengthwise into 4 pieces
1/2 cup rice flour
1 tsp. sugar
1/2 tsp. baking powder
1/2 cup water
Refined oil for frying
Mix the rice flour, sugar, baking powder, and water together into a smooth batter. Heat the oil (about two cups) in a wok or cast-iron skillet until medium hot. Dip the banana slices in the batter and deep fry, one at a time, until golden brown.
Remove with a slotted spoon and drain the excess oil on paper towels. Repeat until all the bananas are fried. Serve hot with masala chai in the afternoon
