Puttu (Steamed rice cake)


Puttu (Steamed rice cake)
A favorite breakfast of most malayalees. Puttu is served with either brown chickpeas cooked in a spicy gravy or a tiny ripe yellow Kerala plantain. Home in the highland have puttu and pani(the boiled down syrup from sweet palm toddy)Like maple syrup,. with sweet boiled bananas.
1 cup Coarse fried rice flour
½ cup Water
½ teaspoon Salt to taste
½ cup Grated Coconut

Method

1. Moisten the flour with salted water
2. Pat the slightly moist flour tougher, keep at aside for an hour.
3. Sieve through a coarse mesh.
4. Bring water to boil in a puttu kodam( vessel we used for steaming)
5. Spoon into the puttu kutti (the small steamer over the puttu kodam)a thin layer of grated coconut, followed by a couple of spoons of rice flour. Repeat till the mould is full. Do take care not to press in the flour
6. Steam for ten minute. Serve hot.
